The Best Avocado Toast

Ingredients:

  • 1 boiled egg
  • 1 ripe avocado
  • 1 small diced tomato
  • 1 teaspoon salt and pepper

Directions:

Mash all ingredients together in a bowl with a fork, and smear the spread onto toasted bread!

Flatbread With Spinach and Mushrooms

Ingredients:

Dough
-1 1/8 cups warm water
-3-4 teaspoons active dry yeast
-1/2 tablespoon honey
-1 1/2 tablespoon olive oil
-3 1/2 cups all-purpose flour
-1 pinch salt

Pizza Toppings 
-1 small carton of mushrooms
-10 ounces fresh spinach
-2 garlic cloves, minced
-1 tablespoon olive oil
-1/2 cup ricotta cheese
-1 cup freshly grated provolone cheese
-1/2 cup freshly grated mozzarella cheese
-1/4 cup freshly grated fontina cheese
-1/4 cup freshly grated parmesan cheese

Directions:

Dough
1) In a large bowl, combine water, yeast, honey and olive oil. Mix well and let sit for about 10-15 minutes. Add in 2 1/2 cups flour and salt, stirring with a spoon until the dough comes together but is still sticky. Cover a surface with 1 cup of flour and work dough into dough balls. Rub the same bowl with olive oil then place the dough inside, turning to coat. Cover with a towel and place in a warm place to rise for about 1-1 1/2 hours.

2) After the dough has risen, punch it down and place it back on the floured surface. Using a rolling pin to form shape and place on a baking sheet or pizza peel. Place the towel back over the dough and let sit in the warm place for 10 minutes.

3) Preheat oven to 375 degrees.

Pizza
1) Heat a large skillet over low heat. Add the mushrooms, spinach and the garlic, stirring well. Cook until the spinach is wilted.

2) Cover the pizza dough with the olive oil. Cover it with layer of the ricotta cheese, then evenly spread the remaining cheeses over top. Add on the spinach and the mushrooms. Place in the oven and bake for 25-30 minutes, until cheese and crust is golden brown.

Chicken Caesar Wrap

Ingredients:

Dressing:

  • 2 small garlic cloves, minced
  • 1 teaspoon anchovy paste (found near the canned tuna in the supermarket)
  • 2 tablespoons freshly squeezed lemon juice, from one lemon
  • 1 teaspoon Dijon mustard (I like the brand Maille)
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise, best quality such as Hellmann's Real
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Filling:

  • 1 cooked and diced chicken breast
  • gluten free tortillas
  • lettuce
  • salt and pepper
  • croutons

Directions:

Dressing:

  1. In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.

Filling:

  1. Mix cooked and cut chicken in a bowl with 1/2 cup of homemade caesar dressing.
  2. Crush croutons and mix in with chicken and slowly add in lettuce as desired.
  3. Add salt and pepper to taste.
  4. Place all ingredients in one side of tortilla and roll and serve.

Chicken Teriyaki Bowl with Pineapple

Ingredients:

  • 1 pound boneless skinless chicken breast, cut into bite size pieces
  • salt and pepper
Teriyaki sauce:
  • 1/4 cup packed light brown sugar
  • 1/2 cup soy sauce
  • Tablespoons apple cider vinegar
  • teaspoon ground ginger
  • 2 cloves garlic minced
  • 1 Tablespoon cornstarch
additional:
  • cooked rice
  • pineapple

Directions:

  1. Season chicken pieces with salt and pepper and place in large non stick skillet.
  2. Cook until completely cooked, stirring often in order to get all sides of chicken.
  3. In a small bowl mix well all of the ingredients except chicken.
  4. Add mixture to chicken and cook stirring constantly, until it thickens into shiny glaze.
  5. Serve over cooked rice with pineapple

Grilled Cheese with Homemade Grilled Cheese

Ingredients:

  • tablespoons vegetable oil
  • 2 onions chopped
  • cloves garlic, minced
  • 1(28 ounce) can stewed tomatoes 
  • cups chicken stock
  • 14cup tomato paste
  • 14teaspoon pepper

Directions:

  1. In saucepan, heat oil over medium heat.
  2. Cook onions and garlic until softened.
  3. Add tomatoes, stock, tomato paste and pepper.
  4. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until slightly thickened.
  6. Using immersion blender or food processor, puree (optional).

Chill Dog with Homemade Chili

Ingredients:

  • Cooked hot dog
  • bun
  • ketchup
  • mustard

Homemade Chili:

  • 1 1/2 pounds lean ground beef
  • 1 onion, chopped
  • 1 small green bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 (16-ounce) cans red kidney beans, rinsed and drained
  • 2 (14-1/2-ounce) cans diced tomatoes
  • 2 to 3 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin

Directions:

Step 1

Cook first 4 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain. Place mixture in 5-quart slow cooker; stir in beans and remaining ingredients. Cook at HIGH 3 to 4 hours or at LOW 5 to 6 hours.

Step 2

Notes: If you want to thicken this saucy chili, stir in finely crushed saltine crackers until the desired thickness is achieved.
